Valentine Cupcakes

Ingredients

125g self-raising flour

125g caster sugar

125g unsalted softened butter

2 medium eggs

150g of raspberries

For the Icing:

500g icing sugar

160g butter

1 vanilla pod

pink/red food colouring

50ml milk

Heart decorations/hundreds and thousands

Method

1. Preheat the oven to 180C/350F or Gas Mark 4.

2. Beat the sugar and softened butter together in a bowl until it reaches a creamy consistency. Add the eggs and beat until combined with the mix.

3. Fold in the flour and raspberries into the mix until almost smooth.

4. Line a muffin tray with 12 paper cases. Divide the mixture between the paper cases and bake for 20 minutes.

5. Remove the cakes from the oven and cool for 10 minutes.

6. Once the cakes are completely cooled it is time to ice them! Use an electric whisk if possible to cream the icing sugar and butter together until light and fluffy.

7. Mix in the vanilla pod seeds and food colouring and mix enough milk to form a smooth paste.

8. Pipe the icing onto the cupcakes and decorate with valentines inspired decoration, e.g Hearts and hundreds & thousands.
